How should I go about this? Should I UVW unrawp every single wall? I'm pretty good with the whole geometry editing, but I'm baffled as to how I'm going to texture every face correctly. Does every object need to be unwrapped/ uvw mapped? This seems like it could be overwhelming...

uvw map your walls and just apply textures. I wouldn't go unwrapping gamelevel, just 2 much unnecessary work. But of course if you have detailed objects then you better unwrap them but unwrapping some walls are not necessary =)

Of course you better make good use of multi/sub materials and material id:s

This is how I do it, when I design in max, and not an editor.

Start with your larger sections of flat walls, subselect them, and planar map them, tile it until it looks like you want it to. Generally a good idea to make variances of the same texture so you can break up the repeat.
Complex objects you'll need to unwrap, if you don't want stretching.

Not unless you're using an editor. If you're using max, just use a directory structure, put your textures in a directory, and keep em organized that way.
Naming convertions help too.
