What's a good poly count for trees in a map? I'm planning on making roughly 30 or 40.

You can make good use of alpha textures and concentrate on using the polys on the trunc. Really it depends on how close you want to get to the trees, you can get away with only 60 polys per tree, or if it's first person I'd suggest about 150 polys per tree.

From anything to 4 up to 200 I'd say, 4 would be 2 surfaces with an image of a tree with alpha mapping...Heck you can get away with 2 tris/polies with on surface and the texture and point it at the camera, that's what they did in Mario 64 and many other games.

Well, it really depends on distance. Having say three tree models, one 2-4 tris, one 60 tris, and one 150 tris, and you could keep your game running smoothly with a pretty lush environment. All you have to do is blend the transition so it doesn't look strange.
