I am new to modeling and texturing, I have AC3D and GIMP2 (I know), which make models and textures respectively.

Is there any guide that teaches one how to model and texture, characters, weapons and all that other hullaballoo?

There is no guide on how to do all that, because there are many ways to do it.

I use Milkshape 3d, Carrara 6, Gimp2, Notepad and others.

You need to search for tutorials how to use ac3d and practice. Then when you make you model, texture it, export it in .x file, create the fpe file, make the thumbnail, just make sure your texture is .tga or .dds format. Just be patient, practice and practice.
