Hello.

A major part of the storyline to my game is a large pipe organ like those typically found in churches.

I would be greatefull if you could tell me how to go about creating such a thing.

A model such as the one you would like will have a very high poly count if you wanted it to look good with smooth pipeing.
This kind of model could effect your frame rate during gameplay.

Not really, all it could be is 5 sided circles extruded to size with a texture to make it looks shiny. The rest will be easy.
