The dialog is made by scripts assigned to the NPCs, there are several scripts out there (use search), but i'm feeling generous, so i'm posting here some:
All the scripts use images to show the dialog (so it isn't text input), just create the images on photoshop or paint with the dialog, place them in the correct folders, and assign the scripts to the NPCs.
