2D All the way! / texture maps?

Oh k so I need some help on my texture vocab

I was browsing some peoples textures and saw that they made 4 different version of the texture

Diffuse Maps
Normal Maps
Specular Maps
UV Layouts
I already know what a UV layout is, but what are the rest and how are they used?

Diffuse texture is the color map, where most the detail is painted in and such, the normal texture is a map that lets the program light the normals in such way that it looks like there's more geometry than it really is.
Specular is for determining how the model is lit, where it's going to be shiny and such.

how would one make a normal map? i looked around and couldn't find any good documentation
