I had a level set up almost perfectly, when I decided to tweak the ambience. I changed it only slightly, and now my entire level is illuminated. Anybody have a fix?

Some people say that I'm crazy... And I agree.

You have to pick up or add one object into the level, even if you move it only an inch, and then the system re-does all the ambience/lighting for the level. Hope this fixes your problem.
