Dark GDK / Cutting models into 2 seperate objects

Hi! I'm working on a shooter, and I wanted to keep it semi simple. But I was recently looking at some Soldier of Fortune screen shots and thought it would be cool if I could shoot people's heads of in my game. So, is there anyway to have 1 object then cut a certain part of that object off into 2 objects. So lets say we have a human. How would I cut the head from the body so instead of having just 1 human object I have a human (headless) and the human's head as 2 objects? I would appreciate any help!

You could make the head as a separate limb/mesh in your 3D app. That way you could position and rotate the head separately.
