Because it only takes one, clever, strong alien to take out a backwater world.

Plus, think strategically. If more aliens were to be involved, that means there would be a larger front line. This is a way to win a war, but not the most effective. Instead, why not send one (maybe a few more) to Earth, stir up trouble, maybe cause them to fight between themselves for a while, and then do guerrilla attacks on strategic locations. A smaller attack force is an attack force that is harder to detect.
There's also a problem with the humans adapting. An open war with many alien troops means there's a higher chance for one of them to be captured by the humans and analyzed for weaknesses.

While it may hurt for a human to punch someone with their hand chopped off, robots don't feel pain. I'm sure it would be just as effective to punch someone with a robotic, metal nub as it would be a robotic fist. As far as projectile based rocket punch goes (wasn't sure what you meant by rocket punch), I can see the draw backs you mention for sure. I don't know though. Chances are that if they are smart enough to figure out how to send their fist flying through the air at high enough speeds to hurt something, they would think of a plan B

Maybe an energy cannon or beam sword?

It could be that the ultimate weapon has side effects. A cool down time, large energy draw, hard to retrieve, difficult to store away again, ect. ect. Plus, showing your ultimate weapon first show's the enemy your cards too soon. This is bad whether the robot's ultimate attack kills his opponent or not. If it kills him instantly, bystanders will see and that could lead to a counter-ultimate. If it doesn't kill him, then any ability to bluff would be lost and he would know he is fighting a losing fight.
