To tell the truth nothing stands out in modern games, it's either cutesy, techno, or really badly done metal.
The theme for Robocop on the Gameboy (old old old) is really good, I first heard it on the C64 version of Robocop, and it was even used in an Ariston advert!. Mad Max/Jochen Hippel was a genious, the Turrican 1 & 2 music is among his best work.
I don't know who wrote it, but there's a compilation floppy on the ST, it had Captive on it, (Medway Boys 87, but can't be sure) - anyhoo - the little menu at the start has an awesome chip tune on it, that's my all time favourite piece of chip music. For some reason, less is more - if you've only got 3 channels, you gotta make em count, so there was always decent melodies in chip music - despite the fact that it was a really awkward way to compose (on computers like the ST, the chip music was actually a tiny little (like 2k) program that worked on interupts, very difficult to compose, very easy to impliment.
Some 16-bit sampled music was good too though, like Shadow of the Beast with it's flutes (made in the awesome Quartet as opposed to the obvious soundtrackers), Xenon2, Gods, in fact all the Bitmap Bros games had cool music (doot doot, doot de doot de-doot de-doot doot doot, name that tune?)
