You forgot that they model it and texture it too.

Well there is no real type of entity called "Boss" they are just regular characters but with more health, better weapons and sometimes special moves.

Often boss entities have one or more of the following features:

1. Bigger/Stronger Appearance
2. More Health and Damage
3. More Complex Combat Animations and AI

None of these are created in the Game Store though (except the Appearance...duh). "You" MAKE a character a boss by altering its health and creating more complex Scripts for it to run.

Learn to script, it's that simple. Animations can be called by said script, etc. etc.

The animations are stored in the .x file. The script simply tells the animations when to play. Animating is part of the character creation process, and comes before scripting.

1. Concept
2. Base mesh (low and high poly/normal bake)
3. UV map
4. Texture
5. AO bake
6. Shader maps
7. Rig
8. Animation
9. Script

(Process varies by artist).

Every character (boss or not) uses an FPI script. They might add a few additional actions to the script, or animation frames to make the boss characters stand out, but the process is essentially the same.
