Writing down your ideas allows you to keep track of all of them for future reference. It also keeps your brain less cluttered when you write your ideas down on paper, so you don't have to hold onto them while you're trying to focus on other things. Whenever I'm working on a game project, I start thinking about all sorts of new ideas for a different game, or a new level, a differnt setting, storyline, etc). If I didn't jot all of them down as they came to me, I'd lose most of them a week or two down the road when I put my concentration into something else.
I have several notebooks and sketchpads full of random character and environment sketches; and notes that talk about new gameplay ideas, various bits and pieces of story, and so on. How all of these old sketches and notes can really come in handy is when you're working on a game, and you get; we'll say 'writer's block'; or, you just want to add something more to what you have. So, rather than stare at the wall for three hours to come up with a new idea, you can flip through all of those notes and drawings you've collected until one of your old ideas sparks a new one for the game you're working on, or you just find a good time to put one of those old ideas to use.
