Hey guys. I have some pretty nooby questions to ask

First off, how do you prevent the escape key from closing the game? I noticed when I was testing my game I would reach for the 1 key to change to my pistol, and then I would accidentally press escape and close it
I just noticed how much less pixelated stuff looks when you heighten the resolution, but it changes the way my game looks, if you know what I mean. My FPS gun models in the first person are the same as the other guns with some basic hands holding them. Usually, the end of the arm is obscured from the view, but on a wider resolution, you can see where the arm cuts off. I made my game at 640 by 480 resolution, and when I doubled it to 1280 by 960, I could only see the top left part of what should be on the screen. Also, on higher resolutions, 2D stuff like sprites and text are a lot smaller. What do you guys do about resolution?
