While testing my game, I was pressing random buttons because I was bored, when I pressed I, I had 9999 health, anyone know about this? And maybe why?

It is only available during test game, and it is simply there for test purposes.

Yeh ever tried to go through an entire game to do bug tests with a bucket load of enemies wanting to kill you its sometimes hard to last long enough to finish all your tests.

A very useful button for those times.

Its not officially a control as its not included in built games and also isn't officially a testing tool it was mainly added as a thing to testers to use and was never removed.
