Does anyone know if it would be possible to have say, for example, a desk with draws that you can pull open using physics but not completely become separate entities, maybe by using bones to connect them? Same thing with a door that you can grab and push open, swing it about etc?

You can do the exact thing in the game Penumbra,I wish you could do that in FPSC

as in penumbra?

i think you can just animate the model and edit the script to make the model open when player use enter (plrusingaction=1)

That,s more scripted work than actual physics, but yes, like Penumbra and Amnesia.

Overkill really. Even if possible. An animation is by far the best way to do that. There was a Jurassic Park game that used a real engine like that, on paper it sounded great, but in the end it was less playable that way.
