Will there ever be a 7.5 installer?
If I install with the 5.4 installer, and go strait to the 7.5 update, will all files be updated?

Yes, update 7.5 contains all the previous updates.

And as for a 7.5 installer, I don't know, but I doubt it. So far TGC have managed about 2 updates a year on average; so a 7.5 installer would only be up to date for about 6mths top.

Seems maybe a little pointless

It updates your DBPro installation automatically. What do you mean exactly?

I think he mean't an installer (or maybe a cd) with v7.5 on it; rather than the somewhat dated v5.4 which I have on cd, which then needs updating with the 7.5 update.

On reflection I think he did too. Is there any need though? You'd want to upgrade to the current version anyway, surely?

It's kind of crazy to still have to install 5.4 THEN 7.5. It'll make future updates even more fragmented for both maintainers and end users.

Also what reason is there for not having the installer 7.5 but still providing 7.5u for previous installs?

Just that it's a bit off to install a 3(?) year old version of a software before you can the current..If you want more sections on your site and more potential install issues it's a good thing though ^^
