(Using MultiSync)

I have a server set up so that all the clients connect to it by default. The clients can party up on the server and then start a game.

My question is: Is it possible to have the clients hook up to each other after they have been matched up? One person will be server while the rest is client (obviously). My goal is to have the main server only for matchmaking, and NOT for the games themselves.

The main problem I'm getting is that if someone is behind a Hub or proxy then it is impossible for someone to server a game.

Is my only option to let people with open IPs to serve, or is there a way to have closed connections to host?

If somebody is playing behind a proxy, then it will be their own fault they can't play, do other games have code to handle people playing behind proxies?

Yes, I know it is possible. Another example is when playing Xbox.
Someone has to host the game. Even people behind a HUB proxy can host these games. Many big name games do this.
Halo2 Vista, Halo 2 Xbox, Call of Duty, Magicka, ext.

How do they do this?
