I'm going to use this thread to maintain a list of texture, music and other royalty-free resources, so that DB programmers have a head start, instead of having to google around the interwebs

royalty-free textures

http://www.cgtextures.com

An amazing collection. Thousands of textures in hundreds of catagories. The free account is very worthwhile, but I can also recommend a paid membership. The paid membership textures are huge and of a very high standard, lots are tileable and some have normal maps included. The help section explains how to create normal maps from any texture.

Amazing collection of free music. I spent hours just browsing them

Awesome idea (and great find on the music)!

Very cool 8 or 16bit sound generator

Photoshop Brushes and Textures
http://www.photoshopbrushes.com/brushes.htm

Vector drawings for blueprints for making 3D models (very very handy)
http://www.the-blueprints.com/

Blender.org - the best 3D animation/model making tool in existence (and it's free to use commercially)

Blender materials repository (free) http://matrep.parastudios.de/

Blender models http://www.blendswap.com/

Lots of quality royalty-free images (but you have to pay) BUT they give out free stuff daily http://www.istockphoto.com

Also a great resource for finding artists and artwork (many free or under co-op licenses)

WOW thanks for the response guys, thats awesome

Ok, this next link doesn't fit into my original idea because its not game assets as such, but I have found it useful because part of my game involves a large railway around the edge of a war torn city. The site has lots of printable model railway buildings and related items that can be viewed from different angles. You will need art skills to turn them into 3D models.

and these youtube channels are full to the brim with amazing train journeys filmed in HD FPS view by the driver

Finally, this site has some downloadable 3D models in poser and obj format (please read the terms of use).

Great texture and music links. Thanks very much!

If I may put in my bob's worth, here are some free texture websites which you probably know anyway.

1. mayang.com

(4250 free textures to date)

2. textureking.com

(Not entirely sure how many textures are listed but the quality seems pretty good)

3. goodtextures.com

(11,000+ textures with a couple hundred seamless textures as well)

4. brusheezy.com

(they have got quite a few texture packs for download. I'm not sure about terms of use etc.)

Anyway, there are a ton more out there. These are some of my favourite including cgtextures as stated above.
