Could anyone tell me how to convert text to a memblock and then back to text again?

Does this show that all single ascii values are one byte?
"a"= 1 byte
"b"= 1 byte

??

a byte is a number between 0 and 255 and i think the ascii codes are all less than 255 so the codes for the letters are all 1 byte
