Because there is nothing to use as a reference, what is a good rule of thumb for sizing objects in DBP?

In other words lets say I use car.x in a FPS driving game. Should the car size be 10,100, or 1000 units big?

I would think that it's important to size everthing correct so that camera views look correct from all zoom levels.

As long as all objects are the same scale it doesn't really matter and of course if they aren't there is always the scale object command.

Personally I preffer to work in the 100's for object size as when it comes to movement the numbers are then manageable. My last game works in the 10's though, but that's just because i'm awkward and defy my own standards.

I like to aim for a scale of 100 units = 1 foot.

That seems to feel fairly natural, given the default camera FOV. This is one thing that does reveal the scale you're working in.

unless you want to mess with the camera FOV... which i dont like to do... other than changing it to a "sniper rifle" view
