I have, what is probably,a very simple issue, when I turn the "Set Shadow Shading On" command onto an object it makes that object appear grey(gray) and does not create any shadows. I'm not sure why this is?

I was just messing about with this command the other day and it turned out it was the model itself causing the problem. You might want to try making a couple of boxes and seeing if the effect works - also, I could only get results when I didn't specify the mesh, range & shader (only set shadow shading on (obj#) did anything).
