It looks like the way Google handles consumable in app purchases has changed, and AppGameKit no longer supports this.

I have just got round to adding the final touches to my latest release, and have hit a road block with this.

You can only select a managed or subscription option when setting up the IAP. See attached file.

You are now required to process the consumable after it has been purchased.

..Or is this handled automatically by setting the IAP to consumable in AppGameKit?

Use "Managed" for both consumable and non-consumable and tell AppGameKit which one you want and it will handle it appropriately.
