Could someone give me an idea on how to demobstrate to the player its progress in the level selection screen by coloriing the already made road on the map?

Its a bit vague.

If it's 2D, then a 2D array with values set where you have been will suffice.
I assume you have some kind of array for the map or whatever, so just maintain the "display to player" thing in the same way?
Need more info to be able to help more...

split road to sections, each their own sprite, set section sprite color with progress?

Make the road transparent and use a texture behind it which you can scale accordingly ....
