This is a subject that has me really stumped. I want to be able to edit the look of a model at a vertex level. Say for example I wanted to make the nose on a character stick out further. What are the steps to achieve this? Do I get vertex numbers and translate the to new coordinates or what?

You can atach apropirate wertex or more to bone ...exactly the same way like you animate arms for example. Than move that bone ...look at mesh deform threat at the top of this page

Or much more dificult way is to use memblocks to edit position of wertex ...for that you need to know position of data (x,y,z position) in memblock and then rewrite it...

I reccomend firsth way

Yeah, all the features you want to adjust, you'd bind to bones - then, offset or rotate the bone limbs with code, and the animation should be fine - you only have to offset the limbs once, and the rest will look after itself.
