I've also tried to use SetEditBoxDepth and set it below the background sprite. The Edit box that is resized and configured does now appear behind the background BUT the other small edit box still remains smack in the middle of the screen.

this is default behavior and is logical.

If your edit box is so big that when the keyboard is on the screen you cant see all of the text box then a smaller one is shown. You can overide this behavior with the command above.
