As you click around the net on hyperlinks, the target page has access to the referring page's url which in the case of Google or other search engines contains the keywords you searched with.

Now, most website hosts log all sorts of interesting details about your visit, like ip address, date, time, filename, referring page, etc.

Then usually once a week or month the host runs a program to analyze these huge logfiles and turn them into a user-friendly version for the website owner to look at. This shows how many users have visited, bandwidth usage, which browsers and operating systems have been used, but also a breakdown of seach engines and keywords used.
