Audacity is a fairly professional audio editing tool and is free (libre and gratis).

You simply won't find an easier to use tracker than VSD Tracker - Just remember to read the help by clicking the giant '?'. I've used most trackers out there, and most use some awkward format for doing anything other than playing a note, VSD tries to keep things simple.

I like Music2000, only drawback is the dated sound of some of the instruments, about time for Music2005 ehh codemasters?.

http://www.skale.org is good, but it's aimed mainly at the old school users of FT2 who wanted newer tech with the same interface (that's why is looks dated), but the interface is super quick. You're never more than one click, or one keyboard shortcut away from the menu you want.

Signature? No! Obsolete! These days it's all about chip and pin!

Might I also recommend:

1. Modplug tracker (www.modplug.com)
2. Forum Search
3. Google

EDIT

In order to avoid a follow up question, I thought I'd take you to the right place on modplug's site http://www.modplug.com/modplug/download.php3?download=Tracker

Enjoy

Ohh, just a note that you do need a plugin to play sountracker modules (not VST) - Bass.dll is the standard I think, the codebase has an example if I recall. I remember a very cool retro demo with UV bars etc for modules, can't remember where I found that though (source was included).

Some programs I've tried and liked:

Music Studio 2004 (Magix, don't even bother with Music Maker)
Adobe Audition
Pro Tools free
Finale Notepad
Sibelius (excellent if you know your way around music theory and want something with more expression than capable with a tracker)
FL Studio 4 (best music looping program in my opinion)
Cakewalk Sonar/Homestudio

Crazy Donut Productions, Current Project: KillZone
