Would you be able to have a weapon be a throwing knife, that can stick to an enmy. Is it possible to make target shooting games. Or a game like if you shoot someones head they die, and if you shoot there leg the limp etc.

Yes it is possible in this you can make
target shooting games!

I don't know about knifes sticking through enemies and then out?

Target Shooting - yeah, don't see why not. There are no melee weapons (of which I would count a knife) though.
