From reading the title, you know the question:
How do you get the textures from the origanal models of FPSC?

I may Be small, but im bloomin good on a computer!

I think you download this program (look at the EA manual for it) and you load the texture for it there, you will find the texture in the gamecore folders.

Its well worth looking through all of the folders in FPSC, that way you will familiarise yourself with everything that they contain and will know what goes where - given that you dont forget and I do often.

So with that you can alter the textures on the existing models in FPSC, or isn't that possible (for instance give him a mustache or whatever)

ahh done!, the textures for characters are in the entitiybank! dds. format, luckily i got dll. for adobe photoshop

DDS Converter google it it will alow you to remove the dds skins to psd format (adobe photoshop) for just skin editing.

you can also get some cool tools from Microsoft DirectX 9.0 SDK off the microsoft sight.
