The manual states each grid unit is 100x100x100. How does that interpret to real world measurements?

I'd say each grid unit is about 1.5x1.5x3 meters.

Each grid unit is 100 x 100 x 100 inches, in real world measurements.

What are you talking about Merranvo? Each unit in the map editor, eg. each segment that you paint down is 100x100x100 inches. All of the desks supplied with FPSC are smaller than a grid unit so they are no where near 18ft long.

Launch gameSpace and change the units to inches. Open up one of the supplied floor models, click on it and you will see the dimensions are 100 x 100 x (2.5 I think) inches.
