I have never used the demo, but I don't think it leaves anything out. You cannot create objects with it at all. You would need a modeling program to do that.

Please do a search for what type of modeling program.

The demo does have a limited amount of objects, weapons and other stuff. Plus you can't use all kind of fancy graphics or make an .exe of the game with it.

Creating characters, vehicles, weapons, heck, even a coffee cup, thats modeling. try your hand at MilkShape first. Then go from there. As far as photoshop goes? That would be used for texturing. Heck I think photoshop is like, uhhhh, 300$? Im a paintshop pro fan myself though. Good luck. And of course. V1, big improvement over demo.
