I'm not sure how this works but does the fps creator site store a list of all the online matches for peoples games and if so, would I be able to run my own master game list?

I doubt it. You might be able to create a list but I don't think that FPSC does it for you.

Let us know how you come along. I think it would be pretty difficult, though, because there are several games out there and unless you had them all, you wouldn't be able to play them.

Therefore a master list would be interesting, but pretty useless.
