Why does the ball fall straight through the model? And what sort of collision (boxes/capsules etc...) should i be using for the roller coaster model (see screen)?

Using a bounding box / sphere may result in your sphere object ending up inside these bounds. For static geometry that is more complex like your rollercoaster use a static rigid body mesh.
