Here's some suggestions as far as weapons go (Organized by country):
Japanese Weaponry:
Katana - Ceremonial long sword
Shirasaya Katana - Quick cane sword
Tachi - Great Sword
Wakasashi - Short sword
Tanto - Dagger
Reverse blade Katana - A Katana but the blade is on the opposite side.
Bokken - Wooden training sword
Naginata - Spear sword
Wushu Maul - Giant mace (2 handed)
Shurikan - A throwing star
Ninja Blowgun - Duh!!!
Throwing spikes - Ninja darts
Caltraps - poisened shards of iron
Samurai longbow - HUGE long bow
Nekode claws - Claws attached to a ninja's wrist, used for both a weapon and to help them climb (The more you know!)
Manrikigusari throwing chains - Chains attached to the middle of belt used for immobilizing enemies.
Yari spear - Samurai spear

Tai Chi Sword - Straight, light blade
Chinese Broad sword - Heavy, curved blade (like what Kung lao uses from the MK series)
Jo staff - Short staff
Bo staff - Long staff
Sais - Duel, short stabbing blades (Like what Melina uses from the MK series)
Tonfa - Duel batons
Wushu Iron staff - Incredibly heavy blunt staff
Kunlun Bamboo spear - Long, Wobbly spear
Kunlin hook swords - Duel hook swords (like what Kabal uses from the MK series)
Kwandao - Chinese hacking spear
Monk spade - Shovel shaped hacking weapon
Wushu double axes - Duel battle axes
3 sectional staff - A staff divided into 3 sections, can revert between 1 whole staff and 3 small rods connected
Nunchaku - DUH!
Kmas - Though used by Ninjas, was first used by Chinese fighters, it is basically 2 short scythes connected by a long chain so it may be used up close or from a distance
Butterfly Knives - Short, Heavy, straight, duel knives (like what Kano uses in the MK series)

Dear horned knives - Small, quadbladed knife. Usually dueled
Tiger fork - Shaolin trident
Emei Piercers - Double-sided stabbing blades
Meteor hammer - Double-sided robe maul
Rope dart - Lightning fast whip spear
Melon hammers - Rounded duel maces
Twin Ring daggers - Leaf bladed dagger
