Ok I have a question
If I make an array to store character data like so



and then reference that data latter



how then do I set the adjusted data back in the array
do I have to make another array or can I just do this

You should use the read file commands instead.

Make sure you put the variable first, then the value - under where you say you are referencing it, you appear to be putting the values of hp and mp into the array. Yes, you can just put the new values in and save it again.
