I don't see an option to change the guy's arm...

Because the "Arm" is hard coded and animated in to a model, which also contains the weapon itself.

I dont know how old you are, I dont want to know, but it clearly isnt old enough to know that things in video games cant happen by magic.

To be a little more constructive, if the weapons you have have extra hand textures, you need to swap them, otherwise you will want to retexture them yourself.

Oh, I suppose then I was magically the ONLY one confused in the main site when it says "New Model Packs also contain new arms like the Zombie! Experience Life on the other side!"

Time to ...uh...do something!

If you own model pack 9 or 10 by Errant AI, he includes bonus arms sets with the pack. Then, you can change the textures. I think there is 8 different arms in all. Hope this helped.
