Should be in the 3D section, but anyways, the question is ambiguous matey! The principles of modeling apply to everything you model. So instead of asking "how do I model hands and weapons in milkshape" you should be asking "how do I do any modeling in milkshape?" and the answer to that question is find some online tutorials.

Psionic has some tutorial on how to make stuff using Milkshape.
You might google for them and check them out.
Modeling hands and modeling weapons are two different things altogether.
If you just got Milkshape you probably want to check out the tutorials on the Milkshape website just to get the basics down.
